This Western family favourite typically forms part of a Sunday meal, and is often served with gravy and roast potatoes. The whole chicken in this recipe is cooked slowly in the oven, together with root vegetables, which add flavour, colour and bulk to the meal. The parsnips, swede and carrots give you starchy carbohydrate, so you don't need to make potatoes, which are often the starchy part of a meal. The juices from the vegetables bring moisture, and the lemon which is stuffed into the chicken cavity adds a zesty touch.
