Try this recipe with less salt. You could simply use a pinch of salt and add other flavours like ground black pepper or lemon juice.

2 tsp sunflower oil

2 small onion, chopped

1 small tomato, chopped

2 tsp fresh garlic, crushed

2 tsp fresh ginger, crushed

1 tsp chilli powder

1 tsp garam masala, ground

1 tsp salt

500 g frozen mixed vegetable

150 ml water

1 green chilli, chopped

handful coriander, chopped

Directions

1. Heat the oil in a large saucepan over a medium heat and fry the onions for 7-8 minutes until soft and lightly brown, stirring occasionally

2. Add the tomato, garlic, ginger, spices and salt and cook for a further 4-5 minutes so the tomatoes start to breakdown.

3. Add the mixed vegetables and the water and bring to a boil on a high heat.

4. Reduce the heat, cover and simmer for 10 minutes.

5. Garnish with green chillies and coriander.
