A 200ml glass of Sunshine Drink is a good source of potassium and vitamin C. Potassium helps maintain healthy blood pressure and vitamin C helps you absorb iron from vegetarian foods. If you don't strain the juice at Step 3, you will maintain the fibre.

1 medium orange, peeled
1 medium tomato
1 medium carrot, peeled
1 small piece fresh ginger, (approx ½ inch long)
100 ml (3.4 fl oz) water, chilled
1 tsp sugar
1 tbsp lemon juice
2 tbsp crushed ice

Directions
1. Cut the orange, tomato and carrot into medium sized pieces.
2. Place into a food processor with the ginger and water and process until all the ingredients are completely blended.
3. Strain the blended juice into a tall glass and add the sugar and lemon juice.
4. Stir until the sugar has dissolved.
5. Add the crushed ice and serve.
N.B. A juicer can be used to process the orange, tomato, carrot and ginger. Add the water, sugar and lemon juice once the juice has been extracted.
