As you would expect, a pudding made from sweetened condensed milk is unlikely to be very healthy. Perhaps try experimenting with unsweetened condensed milk and a few teaspoons of sugar added for sweetness. Or simply watch your portion size as you get over 100 Calories from the sugar alone!

Directions
1. Wash and soak the China grass in 100ml of cold water for ten minutes.
2. In a large non-stick saucepan, boil the rest of the water.
3. Drain the China grass and add to the boiling water.
4. Reduce the heat and stir with a wooden spoon until the China grass has dissolved.
5. Add the fresh whole milk and boil for ten minutes, stirring continuously.
6. Add the evaporated and condensed milks and stir for another ten minutes.
7. Remove from heat and allow to cool.
8. Strain into a serving bowl to remove undissolved China grass.
9. Add ground cardamom and whisk.
10. When slightly set, garnish with almonds, pistachios and saffron.
11. Refrigerate until set and serve cold.
