Serve this dish with a simple tossed salad made of fresh lettuce, cucumbers, and carrots dressed in light olive oil and balsamic vinegar. This healthy side is a great way to add more veggies into your meal! If you're looking for a low-carb option, replace the wholewheat spaghetti with courgette (zucchini) noodles, or Zoodles, which you can whip up in your own kitchen. Use a julienne peeler to thinly slice the courgette into long noodle-like strands and then quickly blanch in water.

2 tbsp lemon juice
1 chicken breast fillet (225 g) skinless and boneless

2 tbsp olive oil
140 g (5 oz) whole wheat spaghetti

Directions
- Preheat the oven to 190°C / 375°F / Gas 5.
- Cut the peppers into large pieces and place on a small baking tray with the garlic.
- Bake for 20-25 minutes turning once in between. Once baked, remove and allow to cool.
- Place the roasted peppers and garlic in a blender and add the tomatoes, garlic/ginger/chili chilli paste, cumin powder, turmeric powder, salt and 1 tbsp of the lemon juice. Blend to a smooth paste.
- Cut the chicken breast into small pieces.
- Marinate with the remaining lemon juice and the black pepper for 15 minutes.
- Warm 1 tbsp olive oil in a small pan and add the chicken to the pan.
- Cook chicken for 10 minutes on a low - medium heat or until cooked through completely.
- Prepare the spaghetti as per the instructions on the packet.
- In a large pan, heat the remaining olive oil and add the red pepper sauce. Cook for 1 minute on a medium heat. Stir in the chicken pieces and reduce to a low heat.
- Drain the spaghetti and add to the pan. Lightly mix so that all the spaghetti is coated in the sauce.
