Healthy Hints
Special occasions tend to demand fried snacks like samosas and fried meat kebabs. This recipe uses minced chicken cooked in a little olive oil, making it much lower in harmful saturated fats. You could grill them instead — just brush with a little olive oil and cook till the juices run clear.

525 g chicken breast, skinless and boneless cut into approx 1" cubes
15 g (0.5 oz) fresh coriander leaf, chopped
1 tsp fresh garlic, minced
1 tsp fresh ginger, minced
green chilli
2 tsp cumin seeds
1 tsp garam masala
2 tbsp golden breadcrumbs
½ tsp salt
½ tsp black pepper
1 egg
2 tbsp olive oil

Directions
1. Place all the ingredients, except 1 tablespoon of olive oil, into a food processor with the chopping blade in place.
2. Set the food processor on a medium speed to mince the chicken into fine pieces and mix all the ingredients equally.
3. If the ingredients do not mix evenly, stop the food processor and mix through with a fork before restarting the food processor.
4. Once all the ingredients have combined into a ball divide the mixture into 14 portions.
5. Take one portion at a time and shape into a ball, then flatten into circles approximately 7 centimetres in diameter.
6. Heat the remaining 1 tablespoon of olive oil in a shallow non-stick frying pan on a medium heat.
7. Once the oil is hot, place half the kebabs, or as many as will fit into a single layer, into the pan and cook evenly on both sides for approximately 5 minutes, or until completely cooked through.
8. Cook the second batch in the same way.
Serving suggestion:
Serve hot with a mint and yogurt sauce, salad and naan.
