Colourful salad vegetables are always a nutritious choice. To make this even healthier, try using less salt. Keeping the peel on the cucumber will add a little fibre.

2 red onion, peeled and cut in half

1 cucumber, peeled and cut in half lengthways

2 tomato, cut in half

1 fresh green chilli, finely sliced

1 tbsp lemon juice

2-3 sprigs fresh coriander

Directions
1, Take each half of the onions and cut into thin and even slices and place in a bowl.
2. Repeat this step for the cucumber and tomatoes. Ensure that the size of the slices are evenly cut.
3. Add the green chilli, sprinkle over the salt and lemon juice and gently mix together.
4. Garnish with the chopped coriander.
Variations:
Replace the lemon juice with malt vinegar.
Replace the red onion with white onions.
For a milder heat, remove the seeds from the chilli by slitting it in half with a knife, then scrape out and discard the seeds before slicing.
